MATURAZIONE
Le uve, ben mature e selezionate in vigna, vengono raccolte nella prima decade di ottobre. Il Frappato e il Nero D’Avola svolgono una vinificazione in rosso con una macerazione sulle bucce di circa 20 - 30 giorni in vasche di acciaio a una temperatura controllata tra i 22 e i 27 gradi. Una parte segue una maturazione in tonneaux di rovere francese di circa 8 mesi e, successivamente, viene posta in maturazione in acciaio per ulteriori 10 mesi circa. Successivamente imbottigliato e posto in affinamento in bottiglia per circa sei mesi.
NOTE DI DEGUSTAZIONE
Colore rosso ciliegia intenso con riflessi violacei. Il nostro Cerasuolo di Vittoria Classico DOCG presenta all’olfatto note fruttate, con sentori di mirtilli, marasca e mora, con un sottofondo di liquirizia. Il gusto è pieno, caldo e avvolgente, con note di frutti rossi e una lunga persistenza finale. Vino ben strutturato, completo ed equilibrato.
ABBINAMENTO
Ideale con carni rosse, selvaggina e formaggi stagionati come il Ragusano DOP. Si consiglia una temperatura di servizio tra i 18 e i 20 gradi.

MATURAZIONE

Dopo una pressatura soffice la fermentazione avviene in silos di acciaio per circa 15 - 20 giorni a una temperatura controllata tra i 12 e i 15 gradi. Segue una maturazione in acciaio di circa 2 mesi, dopodiché il vino viene imbottigliato e posto in affinamento in bottiglia per un paio di mesi.
NOTE DI DEGUSTAZIONE
Colore giallo paglierino brillante. Al naso sprigiona sentori di frutta, albicocche e pesche a polpa bianca arricchiti da fiori di zagara. Gusto ampio con spiccata sapiditĂ e mineralitĂ .
ABBINAMENTO
Ideale con piatti e frittura di pesce, carni bianche e formaggi freschi. Si consiglia una temperatura di servizio tra i 12 e i 14 gradi.

The first Sicilian IGP
Cutrera IGP Sicilia is our blend of the finest and most representative native cultivars, Biancolilla and Nocellara del Belice. It is the extra virgin olive oil that best expresses Sicilian character, and it was also the first oil to obtain the “Sicilia” Protected Geographical Indication. A great all-rounder in the kitchen: perfect for giving body and pepperiness to vegetable soups, excellent on carpaccio and with pinzimonio.

Sicilian organic durum wheat for a special pasta
Our busiate, bronze-drawn and slowly dried at low temperature, are made with semolina from ancient Sicilian durum wheats. The shape comes from Trapani and is distinctive for its helical twist, which holds the sauce.
A great classic with quality ingredients
The Sicilian recipe par excellence, our Sugo alla Norma is made with eggplant fried in Frantoi Cutrera extra virgin olive oil, which makes the frying lighter and tastier. Finish with a drizzle of raw oil and grated salted ricotta.
Spicy, but not too spicy
Arrabbiata in its Sicilian version is hot but perfectly balanced. We make it with fresh tomatoes and other Sicilian ingredients chosen strictly for their excellent quality.

It is the most classic of Sicilian antipasti and, once upon a time, it opened important family lunches. These green Nocellara olives are prepared according to tradition, with nothing but our extra virgin olive oil and wild herbs.
Only tomatoes, parsley and Sicilian sun
“Capuliatu” in Sicilian means “minced”. Sun-dried tomatoes, following the traditional recipe, are minced, dressed with oil and parsley and preserved. Excellent as an antipasto on bruschetta or crostini.

Cerasuolo di Vittoria DOCG
Cherry red with violet reflections. On the nose, fruity notes with hints of blueberry, morello cherry and blackberry. The taste is full, soft and enveloping, with red-fruit notes and a long finish. Ideal with red meat, game and mature cheeses such as Ragusano DOP.

Cerasuolo di Vittoria Classico DOCG Taliari
Part of it matures in French oak tonneaux for about 8 months, then a further 10 months in steel and six months of refinement in the bottle. Deep cherry red; notes of blueberry, morello cherry and blackberry with an undertone of licorice. Full, warm and enveloping on the palate, well structured and balanced.

Nero d'Avola Sicilia DOC
Deep ruby red. On the nose, fruity notes with hints of plum and morello cherry. On the palate, full and warm sensations, well balanced by a lively, sweet tannic structure; the finish carries hints of berry and cherry. Ideal with stew, roast beef and mature Ragusano DOP.

Vittoria DOC Frappato
Bright cherry red. Floral notes of slightly withered flowers, spices and small red fruits such as blueberries, wild strawberries and blackberries. Fine tannins, with spicy, fragrant elements. Ideal with cured meats, dishes based on oily or raw fish, and fresh cheeses.

The two whites, free
Grillo Sicilia DOC — straw yellow with greenish reflections, floral notes of white flowers and citrus, marked savouriness and minerality, an aftertaste of pear, pineapple and jasmine. Ideal with fried fish or vegetables, white meat and fresh cheeses.
Catarratto Lucido Sicilia DOC — bright straw yellow, on the nose hints of apricot and white-fleshed peach enriched with orange blossom, a broad taste with marked savouriness and minerality. Ideal with fish dishes, white meat and fresh cheeses.
A single-variety Biancolilla extra virgin olive oil in the Argila Serenity Blu bottle, light blue and decorated with Sicilian majolica patterns in white. Biancolilla is the most widespread native variety on the island: this one comes from our own olive groves facing south, between 150 and 250 meters above sea level.

Single-variety Biancolilla
A medium fruity, elegant extra virgin olive oil from the Biancolilla variety, the most widespread on the island, from our own olive groves facing south between 150 and 250 meters. Green with golden shades, notes of artichoke and green almond, slightly bitter with a well balanced spiciness. Ideal precisely on marinated fish and in fish soups.
Yellowfin tuna in our oil
Our yellowfin tuna is hand-processed and preserved in Nocellara extra virgin olive oil, to guarantee the best preservation and enhance its flavor. As an antipasto or for first courses, sandwiches and salads: the preserving oil can be reused as a condiment.
Cantabrian anchovies
Caught in the Cantabrian Sea, after salting they are hand-processed and preserved in Cerasuola Frantoi Cutrera extra virgin olive oil. Here too the prized preserving oil is not thrown away: it is a condiment.
Tuna sauce with capers
Simple and authentic, with Sicilian capers and tomatoes and premium tuna. Perfect on pasta as it is, to be finished with fresh mint leaves.
Anchovy sauce with wild fennel
Wild fennel, Sicilian tomatoes and Mediterranean anchovies. Heat for two minutes; excellent finished with fresh fennel and chopped toasted almonds.
Mediterranean pesto

Primo DOP, the Sicilian oil par excellence
Primo is the single-variety DOP extra virgin olive oil obtained with 100% Tonda Iblea olives, the native variety of the Monti Iblei. It is Frantoi Cutrera's flagship brand, the first to receive the award back in 2001, and since then it has never slipped from the podium of the main national and international competitions. An intense, robust and fragrant oil, suitable for hearty first courses, meats and legumes: it enhances grilled fish, soups and salads, bruschetta and Caprese salad.

A Caltagirone ceramic bottle with two faces: the Moor on one side, the Moorish woman on the other. Shaped and painted by hand, it holds the finest selection of our IGP Sicilia extra virgin olive oil.
Authentic Caltagirone ceramic
Every bottle is made by hand by the Ripullo ceramics workshop in Caltagirone and comes with the certificate of guarantee of authentic ceramic hanging from its neck. Caltagirone is the capital of Sicilian ceramics: no two pieces are identical, and the small differences in line and colour are the signature of handwork.
When the oil is gone the bottle stays: it is an object to keep, not packaging to throw away.
The two faces
The Moor and the Moorish woman are not two bottles: they are the two sides of the same one. On one side the man, with beard and moustache; on the other the woman, with her earrings. It is the tradition of the Moor's heads on Sicilian balconies, tied to an old Palermo legend of love and betrayal: the tag hanging from the neck tells it in full.
